Lemon-herb cauliflower rice is a great substitute for regular rice and offers an easy way to pack more veg into your diet. A must if you struggle to eat enough vegetables, lemon-herb cauliflower rice not only bumps up the nutrition in your meals, it also tastes insanely good! Serve it alongside za’atar salmon.
LEMON-HERB CAULIFLOWER RICE INGREDIENTS
You only need a few fresh ingredients to make cauliflower rice:
- Olive oil: For sautéing.
- Aromatics: Onion and garlic for a whole heap of flavour.
- Sea salt: Salt enhances the flavours of the other ingredients.
- Cauliflower: The star ingredient! A small head of cauliflower weighs around 300g, and will yield about 4 servings of cauliflower rice. Rice your cauliflower in a food processor, you can do this with the blade in the machine, or you can use the grater attachment if you have one. If you don’t have a food processor just use a box grater to coarsely grate your cauliflower.
- Fresh lemon: Use the juice and zest of half an unwaxed lemon.
- Coriander: A small bunch (around 25g) of fresh coriander. I use the whole herb, I don’t think people commonly use the stalks but they add a lot of flavour and you don’t have any wastage! Finely chop the stalks and roughly chop the leaves.
HOW TO MAKE LEMON-HERB CAULIFLOWER RICE
It couldn’t be easier to make this lemon-herb cauliflower rice. Just follow these three simple steps:
- Heat the olive oil in a large frying pan over a medium heat. Add the onion, garlic, salt and coriander stalks and cook for 4-5 minutes, or until soft and fragrant.
- Add the cauliflower and cook for 5 minutes, or until softened, stirring frequently.
- Stir through the lemon juice, zest and coriander leaves to serve.
