Cranberry and pistachio frozen yoghurt bark
This homemade frozen yogurt bark is beyond easy. It's healthy, delicious, fruity, nutty and the perfect dessert for spring and summer.Â

- 400 g full fat Greek yoghurt or coconut yoghurt
- 2 tsp pure vanilla extract
- 1 tbsp honey or pure maple syrup
- 1 tbsp unsweetened dried cranberries
- 1 tbsp pistachios roughly chopped
Line a baking tray with plastic-free parchment paper. Place the yoghurt, vanilla extract and honey in a large bowl and mix to combine.
Transfer to the prepared tray and smooth with a spatula. Scatter with the cranberries and pistachios and freeze for at least 5 hours (or overnight). Remove from the freezer and break into chunks to serve.
