Cranberry and pistachio frozen yoghurt bark

This homemade frozen yogurt bark is beyond easy. It's healthy, delicious, fruity, nutty and the perfect dessert for spring and summer.

Ingredients
  

  • 400 g full fat Greek yoghurt or coconut yoghurt
  • 2 tsp pure vanilla extract
  • 1 tbsp honey or pure maple syrup
  • 1 tbsp unsweetened dried cranberries
  • 1 tbsp pistachios roughly chopped

Instructions
 

  • Line a baking tray with plastic-free parchment paper. Place the yoghurt, vanilla extract and honey in a large bowl and mix to combine.
  • Transfer to the prepared tray and smooth with a spatula. Scatter with the cranberries and pistachios and freeze for at least 5 hours (or overnight). Remove from the freezer and break into chunks to serve.
