CASHEW GINGER CHICKEN INGREDIENTS
To make the mouth-watering sauce for the chicken all you need is cashew butter, ginger, garlic, tamari, apple cider vinegar, honey and water. A note on some of the ingredients:
- Cashew butter: Use a smooth, roasted cashew butter and make sure it’s well-stirred. The recipe won’t work so well with the drier cashew butter at the bottom of the jar. See product recommendations on the recipe card for my favourite.
- Ginger: The flavour is more punchy if you use fresh ginger. If you’re short on time or don’t like preparing ginger then use frozen chopped ginger rather than ginger from a jar which usually contains vegetable oil.
- Tamari: I always use tamari instead of soy sauce. Soy sauce is not gluten-free, while tamari usually is (check the label). Tamari has a stronger umami flavour than soy sauce and is less salty. See product recommendations on the recipe card for my favourite.
- Apple cider vinegar with the mother: My favourite is Raw Organic Apple Cider vinegar.
- Honey: Adds a subtle sweetness to the recipe and balances out the flavours. You could use maple syrup if you prefer.
HOW TO MAKE CASHEW GINGER CHICKEN
This is a simple, quick and easy recipe. Preheat the oven to 180°C (350°F) and then follow these two simple steps:
- First make the sauce. Place the cashew butter, ginger, garlic, tamari, apple cider vinegar, honey and water in a blender and blend until smooth.
- Next, transfer the sauce to an ovenproof baking dish, add the chicken and turn to coat. Bake for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened, turning the chicken once halfway through.

WHAT TO SERVE WITH CASHEW GINGER CHICKEN?
This chicken goes well with brown rice or brown rice noodles to soak up the delicious sauce and let’s not forget the essential veggies! While the chicken is in the oven, quickly stir-fry your favourite green veggies.
When the chicken is cooked, serve in bowls on a bed of brown rice noodles with your stir-fried greens, and sprinkle with spring onions and red chilli to serve. SO good! Trust me, this will be your new favourite dinner!
